I haven't posted here in a long time (so BUSY! Crafting like a mad woman, and helping Rags with his website, and fan relations and event coordination).
It's not the traditional "creamy" potato soup, but it's something I
cooked up a week or so ago because I was at loss for what to make as a
side for a light lunch. I don't use amounts, because I don't measure when I cook. I
always tell people," make it to taste" XD When I make this soup, I
usually use about 4 med./large potatoes and half a bag of lentils (8oz
or so--adjust this as you feel necessary, I like lentils a little too
much so I use more than most people would).
Potato & Lentil soup--
Sauteé
1/2 of an onion and 3(more or less depending on how much you want to
taste it) cloves of garlic in about 1tsp of olive oil in a large sauce
pan until onions are soft. Add water* to fill pot about two thirds of
the way full , and add these spices and herbs:
Broth**:Indian tumeric, ginger,paprika, cumin, cayenne, cinnamon, cloves, all spice, nutmeg, cardamom, parsley, salt, pepper.
Add lentils and cook until soft.
In
another pot cook potatoes until tender, drain and add potatoes to
lentils. Let soup simmer for about 20min, and then serve :)
*Add
water as needed(and as desired , if you would like a more "brothy"
soup), as lentils will soak up a lot of it. Adjust herbs and spices to
taste if soup becomes "bland" from added water.
